Tomato sauce from roasted tomatoes






Sauce recipe for about 1 liter
  • 1 kg of tomatoes
  • 2 onions
  • 3 cloves of garlic
  • 2 tablespoons of olive oil
  • leaves of 3 sprigs of fresh oregano
  • 4 sprigs of fresh thyme
  • 1 teaspoon of sugar
  • 1 tablespoon of red wine vinegar
This is how you make tomato sauce from roasted tomatoes:
Preheat the oven to 175 degrees.
Wash the tomatoes, cut them in half and place them cut side up in a large roasting tin or baking dish. Roughly chop the onion and garlic and divide between the tomatoes. Also divide the oregano leaves and thyme sprigs between the tomatoes. Drizzle the olive oil over the tomatoes and sprinkle with a good pinch of salt and pepper.
Roast in the oven for 1 hour. Remove from oven and remove thyme sprigs. Puree the sauce with the hand blender. Then season with the sugar and vinegar.
